allow grouping tags like folders/notes ie subtags
allow grouping tags at least/especially in the tags menu on the left (the one bellow the notes)
if you click on the tag, show all notes witch use that tag
allow right click on a tag eg to remove it.

I am afraid you will have to better explain what you propose. As far as I can tell, everything is already in place, you may just have to "explore" Joplin a little longer.

The nested tag function was revoked, because some performance impacts.
You can finde some topics for nested tags with the search.
