These reports seem to be affecting Macs and this thread mentions possible problems with the MacOS Theme plugin when upgrading. The above plugin list shows that the theme plugin is installed.
Make sure Joplin is shut down and try deleting ~/.config/joplin-desktop/plugins/com.andrejilderda.macOSTheme.jpl
before trying to restart Joplin. I am not saying that this IS the cause, but it is worth checking.
If this does not help please note @laurent's post above about enabling debugging in order to try to find out what is going wrong.
