How "secure" are notes published to the internet? For example are they indexed by search engines or AI?

By creating a shareable link. This is how it is described in the documentation:
FWIW, once a page is published to the web, I'd consider it accessible to the public. Although in practice you need the unique link to view the page, it's not a guarantee that the page will not be viewed.
I definitely wouldn't publish a page with sensitive information, that I wouldn't be happy for anyone to see.
I think his question extends to … Has Joplin Cloud flipped that bit that asks search engines to please not index them? It also turns away things like the wayback machine, etc.
FWIW One way to publish notes and keep them private is to use your own Joplin Server and access it via your Tailscale virtual lan. Only the devices connected to your Tailscale account will be able to view the published note.
