What issue do you have?

I have wxported from Evernote and have 3 notebooks as they only allow 100 at a time.
They are in Joplin okay as 3 files.

How do I join them and name as it was one notebook before?

So I assume you have already imported all three of them. If I understand correctly, you currently have three notebooks, each containing 100 notes, correct? Then you want to merge them into a single notebook with three hundred notes.

Just move notes from notebooks B and C to notebook A. To quickly select all notes in a notebook, hit ctrl+a, them move them.

When done, you can trash empty notebooks B and C.
