Enabling Encryption on the Terminal Application

I am running Joplin cli version: joplin 1.6.4 (prod) on Pop_OS 20.04
I see step 1 in enabling encryption is:
1. On your first device (eg. on the desktop application), go to the Encryption Config screen and click "Enable encryption"
My question is how do I do step 1 from the command line?

The CLI doc's are here. The command you'll want to look for is e2ee. If you have trouble just follow up here, I've never used it but I'm sure others have.
