I’m very new to Joplin, and have been looking for information about Joplin automatically syncing on edit/time interval for desktop and mobile. This is a huge advantage to using Evernote, and I figured Joplin would either have similar functionality or a workaround.

Yes, Joplin does support that. Where’s the issue?
I replaced Evernote with Joplin and a free Dropbox account. You are limited to 3 devices in Dropbox for free. It was very easy. The options are on the menu for syncing via Dropbox.
One big advantage over Evernote, is that your mobile devices can store all your notes for off-line access.
