What issue do you have?
I tried upgrading from Flatpak v3.6.x to 3.7.x using the online wget (wget -O - https://raw.githubusercontent.com/laurent22/joplin/dev/Joplin_install_and_update.sh | bash).
3.6 still works. However there is no upgraded version.
How do I access the newly install v3.7.x?

You now have two different versions of Joplin installed.
You previously installed v3.6.x as a Flatpak. From looking at Flathub it appears that at this time whoever maintains the Flatpak version of Joplin has not yet updated Joplin on Flathub to v3.7.x.
You then used the official install script that installed the v3.7.x AppImage.
As at the moment when you click the Joplin icon it runs the v3.6 Flatpak, you can either remove the Flatpak version and stay with the AppImage or remove the AppImage and wait for Joplin to get updated on Flathub.
Another possible option is to run the AppImage until the Flatpak version gets updated. If you search your program launcher you'll probably find that you actually have two Joplin entries, one Flatpak and one AppImage.
If you do run the v3.7 AppImage you will not easily be able to revert to v3.6 of any type as there was a new feature added to the settings (the AI chat stuff) that v3.6 does not support.
