AFAIK, the desktop and Android versions share most of the code. So I find it a bit surprising that I cannot create checkbox lists on Android.
On the desktop, when I hit ENTER at the end of a checkbox, I get a new line with a checkbox. On Android, it is just the new line and I have to type the checkbox stuff ‘- [ ]’ manually, which is not fun with the Android on display keyboard.

Workaround: Gboard Settings > Dictionary > Personal Dictionary > For all languages. Use - [ ] & cb(check box) as shortcut. Next time you type cb, you’ll get - [ ] as a suggestion.
