What issue do you have?

Where are my notes saved locally?

They are stored in a database. Is this for backup purposes or is it that you would like to access and edit them without Joplin? If it's the latter, then the answer is no, the notes are not stored in a readable format, and as such you do need Joplin to work on them (unless you export to a different format, but then they become independent from the application).

Tools > Options > General and it is shown in the very top line of information, "Notes and settings are stored in:".

The path on Linux is normally ~/.config/joplin-desktop/.

Each profile needs its backup...

When you use the backup plugin only the current profile is backed.
