Here's what I would do in your shoes:

  1. Disable or delete the other table plugins I've mentioned, if applicable
  2. Install the MultiMarkdown Table Tools plugin if you haven't already done so
  3. Click the Create table toolbar button with the table icon
  4. Click the Create table dialog button after adjusting rows, columns, and header settings
  5. Populate a table cell
  6. Press Tab to tab through and auto-resize the table

These steps work on my machine. If they don't work for you, please let us know.
