I don’t see any links or instructions on how to import notes from my iPad or iPhone.
Is there a link at git hub for this?

Apple doesn't provide any way to export all your notes (nice vendor locking), but you could use this script to import them into Evernote, and from there you can export ENEX files, which Joplin can import:
