I use Joplin the same way as I used Evernote and CintaNotes - plain text like Notepad. No formatting.
I'm using the "experimental Rich Text editor" only (for non-vital data). Seems to be fine for my purposes.
But when using carriage return, I don't want a blank line to be inserted. How do I fix that please?
Thanks.
This is the normal behavior in a rich text editor - when you press enter, you actually create a new paragraph, so that's the extra blank line you're seeing. If you don't want to create a new paragraph, it seems you can press Shift+Enter.

I think that's normal behaviour. I thought there might be a hack.
Thanks.

Maybe an option to toggle this behavior could be added for those of us that prefer a notepad experience?

This drives me nuts. It's counter-intuitive and I've never seen it in any other app.
You can see at the bottom of this page that quite a few people don't like it. Multiple posts on this issue.
The internet also has posts of people trying to fix it and messing up their notes (including me).
Example on reddit: r/joplinapp/comments/pnpzo9/double_line_space_when_pressing_enter/
Apart from not being able to see words and images within notes when I search on my mobile device, this is the one thing that irks me about Joplin, which I otherwise greatly like.
Can we please have the option to NOT have a new line?
