Yes, it is possible and the preferred syncing method for a lot of people here. Provided that your tablet is Android based and not an IPad of course since Syncthing doesn't plan on releasing for IOS.

In case you want E2EE, follow the instructions here:

Sync to the filesystem instead of cloud. Setup Syncthing so that the folder you chose for Joplin is itself synced between Android and Linux. Then finally follow the remaining steps and you will have synced Joplin apps in both platforms.
