If you mean the png and jpg files in C:\Users\Username\.config\joplin-desktop\resources
then no. You'll lose all the png and jpg images attached to your notes.
E2EE encrypts your note data for when it leaves your device, not on your device. If you see a .crypted
version of your attached files in the resources
folder then, according to this post, they are just cache files and after stopping Joplin they can be deleted.
This GitHub issue was created to explore the option of having Joplin clear all .crypted
files when the app is started.
