One question: is it better to have many small notes or few long notes? Better in terms of database efficiency and overall Joplin performance.

It depends what you mean by long notes. If they are huge with lots of pictures, tables, katex code, etc. then it can potentially be slow to display them and work on them (not always, but we had such reports).
In general both are fine anyway - the app handles well many notes, and relatively large notes. The major known issue is when you have thousands of tags, in which case the app may be slow.
