Is jex completely exported? Are all attachments and notes exported?

Yes, JEX (Joplin Export file) contains everything* (notes, attachments and metadata).
Main menu > File > Export > JEX will give you a complete backup of all data.
Right click a single or multiple notes > Export > JEX only exports selected note(s).
*A JEX export file does not contain your master e2ee keys though. So export/re-import to JEX is a good way to clean and delete unwanted master keys.
