I need to upgrade this self-hosted Joplin server. The joplin server is installed via docker-compose.
What are the steps to upgrade to the latest joplin server without loosing data.

Just swapping the Docker image should be sufficient since it will automatically upgrade your database. You should of course make a backup of your data first
