On windows, the path to save notes is saved on Disk C by default,

I believe that there is an unsupported feature that uses a --profile flag when launching Joplin. If you search this forum for "profile" you should be able to find more detail.

You could use the portable version and put it on the drive of your choice. Or you can use mklink to link the profile dir to a folder on another drive
