Yeah, Joplin is at its core a note taking app. It can do lots more that that so it's not surprising that people judge it by the things it is able to do. But almost always when I see complaints about the app it relates to features that go beyond note taking.
It's also a Markdown app. If something is not in the Markdown specs, then you may not find it in Joplin. Column widths are impossible to control in Markdown, so it's not surprising that Joplin doesn't do that.
Why does all this matter? Because there is one group of people who complain that Joplin doesn't do X, and another group that complains that they don't want to be locked in to one app. Those two needs are incomparable.
A great and accurate recap! While Joplin should never stop looking beyond the note-taking horizon, it's important not to forget its original mission: to be a note-taking app.
I almost wish that before these "Why I'm not switching to Joplin posts" are permitted the OP has to first answer in the affirmative that they are looking for a note-taking app where the user data is mostly platform independent. Because if that's not true, then you aren't looking for Joplin. Like, "I'm not switching to Joplin because I want more than a note taking app" isn't going to help move the cause forward.
Of course if people are asking, "Can Joplin do XYZ?" that's beyond a note taking app, that's fine.
I'm not pointing this at the OP necessarily, just venting.
