On desktop, when trying to remove a tag from a note, I click on the tags and remove it from that note. however, what this does is actually delete the tag from Joplin. Why? How do I simply remove the tag without deleting it?

When a tag is no longer associated with any note it disappears from the tag list.

In Evernote, it is possible to delete all notes with a particular tag, and this tag will be showed nevertheless. Joplin has another approach; once you delete the last note with a particular tag, this tag will disappear.
