is there a way for Joplin to calculate a date 2-weeks into the future?

Not sure if this is what you’re asking for but I developed the Slash Command Plugin to do something similar to that.

For example, after install the plugin if you want to get a date 14-day in the future just type

\date+14

where is the customization table that you describe in the README?

Open Joplin Setting menu then looking for “Slash Command” panel, you will the configuration in it. But I would not recommend it unless you know basic programming.
