Undo function in edit mode

What issue do you have?

I am currently looking for the undo function in edit mode, e.g., if I delete something by mistake. Is there such in the App itself, when not using the Google Keyboard?

Yes you can do it. When you have made any change to a note on Android while in edit mode, left and right arrow buttons appear in the top left of the screen which are undo and redo buttons
