I have Joplin on a Iphone that I’m about to get rid off. Do I need somehow unlink Joplin from the device first? In other words I want to avoid a situation, where by removing the Joplin app my other devices think, that I have deleted all notes.

You can just uninstall it normally. Perhaps do a backup first, just in case.
