Joplin is a note-taking app and I believe that Joplin's core purpose is to use Markdown to avoid proprietary formats. There are several plugins that can help with using tables in Joplin but I do not know whether any will help you in your use case.
Examples:
I moved to Joplin from Evernote as I was fed up with the formatting creating problems for me. It was possible to apply formatting to an Evernote note that was invisible and could not be removed without exporting the note, trying to track down amongst all the code and formatting tags what the problem was, manually editing it and then reimportring it. Even if you copied and pasted into a new note it took the broken formatting with it. I found Joplin had a simple formatting method (Markdown) and gave me complete control. Sure I lost some of the ability to use fancy formatting but I actually found that for note-taking I did not need it.
So it is probably not a good choice to select a Markdown-based note application if word-processor like features are vital. It's not that tables are "completely useless", they are just not what you are used to. As much as I like Joplin I will have to admit that Markdown has its limits and I personally can manage with those limits. However if a user really must have Evernote features they are probably better off using Evernote.
